Roasted Pumpkin Seeds


Preheat oven to 400*. Rinse and dry seeds thoroughly. In a large cookie sheet add two table spoons of olive oil and add seeds. Mix well until all seeds are well coated. Sprinkle garlic salt over top and mix again. Cook for 15-20 minutes stirring once. Remove from oven and toss again and place in a shallow dish... Enjoy while you can, they won't last long.

I always cook these opposite--lower heat (300) and longer time (45-60 min.) They seem to cook up to be more tender that way and still get crispy on the outside. Thanks for all the recipes.

I love these and they remind me of when I was a kid. My mom didn't put oil on them though. Anyway, I remember one time we had them sitting out to dry in the sun, my mom put them on a tray on the roof of the car. Well, we started driving down the street, forgetting about the drying seeds, and they flew off into the middle of the street! No homemade seeds that year.

Sounds yummy!!!I didn't know you could roast and eat them. Oh! well now I will have to wait until next year.
